Round 1 of my zucchini muffins was successful, so I knew Round 2 would be too.
I used the same recipe from Round 1, but I used 1/2 organic white flour and 1/2 of the wheat berries that I ground.
The muffins turned out fantastic. They were a lot lighter in texture and color, and had good flavor.
This is what happens when you fill your muffin tins more than half full.
Next up, will be “Zucchini Things” that I made. They are on the savory side with cheese and onion. YUM!
