Round 1 of my zucchini muffins was successful, so I knew Round 2 would be too.I used the same recipe from Round 1, but I used 1/2 organic white flour and 1/2 of the wheat berries that I ground.
The muffins turned out fantastic. They were a lot lighter in texture and color, and had good flavor.This is what happens when you fill your muffin tins more than half full.
Next up, will be “Zucchini Things” that I made. They are on the savory side with cheese and onion. YUM!
