With fresh eggs in the refrigerator, omelets are on the menu at our house.

SSFC - omelet

  • Eggs – from just down the street
  • Cheese – some that I made
  • Peppers – from the garden (and frozen)
  • Onions – from the garden (and frozen)
  • Toast – homemade from Texas wheat

Oh, it was a good omelet!

    With 9 dozen eggs in the fridge we HAD to use some of them up so 14 of them went into a quiche tonight made with homemade shortcrust, bacon, capsicum, spinach, white wine, zucchini (yes… MY zucchini 🙂 ) and apparently it was delicious. Not bad from a man that only ate potatoes, peas and carrots before he moved to Australia 🙂 oh…and he didn’t eat garlic (that he knew about for 2 years till I fessed up that it was in just about every single meal that he had eaten 😉 )…have a wonderful New Years Day Emily to you and your family and here is hoping that 2013 brings all the good things your way 🙂

    • Wow Fran. That is a lot of eggs in the fridge! Your quiche sounds great! And using your zuc in it sounds great too! LOVE your story about the garlic. Happy New Year to you and Steve!

    • Thanks Jes. I can relate, life is so busy lately. That is why I seem to be posting very simple (and I feel repetitive) meals for SSFC on Monday’s. I do use so much local food, but lately we eat a lot of the same local stuff stuff over and over a lot of what is coming out of the garden or freezer. I need a trip to the farmers market or the little shop near us that sells local….. soon
