Favorite bread

In the beginning of January I made up a loaf of my favorite bread and took some photos. I just came across the photos and realized I should make another loaf.

Black olive and rosemary breadI don’t get very creative in making different bread. It is usually just general white/whole wheat mix of whole wheat/spelt mix. I always add ground flax seed to every loaf to pump up the protein and the fiber content. More often then not, I add an addition whole grain like millet or amaranth that soaks in the dough as it sits overnight (no-knead bread.)

Every four month I head down the road for my scheduled manure pick-up and I bake two loaves of bread to take as a thank you. One loaf is whole wheat and the other is black olive and rosemary. I always ask what kind of loafs they want and it is always the same as the original loaves that I took them almost three years ago when I went for my first manure pick-up.

At the same time, I make a loaf of black olive and rosemary bread for us too. I love it simple toasted with butter. It is also good with a layer of herb cheese spread too!
