SSFC: Burger, zucchini and salad

I found a few zucchini’s that I had squirreled away in the utility/laundry room.

A few of those zucchini were still in good shape so I cut those up and froze them. Three of them were very light and hollow feeling, and when I cut into them they were a bit pithy and seedy, so I turned them into boats, by scooping out the seeds. The outer flesh was still good, and since we (we, meaning my husband) were going to be grilling some burgers, the zucchini boats went on the grill too.

We still have lots of lettuce growing the garden, so a fresh green salad on the side was a perfect addition to this meal (actually to every meal). I also pulled a jar of the zucchini relish out of the refrigerator to use as a topping for the burgers.

The burgers were great! The grilled zucchini boats where great! The fresh salad was great! The shredded cheese on the burgers was the only non-local ingredient in this meal. That is great!

    No, I have not made burgers lately. We don’t have a grill so use the George Foreman grill. The zucchini look delicious that way and I wonder if I could do that on the George Foreman? Do you put a little oil on the grill first? All those onions on the burgers look good but I think I would put a few less on mine! What herbs did you use? Nancy

    • Hi Nancy, I think I would be lost w/o our grill. I do love it. Normally, I usually slice the zucchini in l about 4 long pieces (like slicing a loaf of bread, except the long way) and grilling them. these were so old that I needed to scoop out the centers, but if you had fresh zucchini, you would not need to do that. I think you could “grill” them your George Foreman. I don’t tend to brush my grill with oil like most people, I brush the meat or vegetable with oil as I put it on the grill and turn it. I know w/ the g. Foreman grill, the surfaces are non-stick, so you could just wipe with oil there and it would be find i would think. Just like you do for meat I think. The burgers were topped with shredded cheese – that is what you see in the photo. The herbs I used in the burgers were the Italian Herb mixture I make up, chopped onion, chopped green & red pepper (from the freezer), eggs and bread crumbs. Since my mom was here we didn’t put in any chopped hot peppers.
